It will be worth studying that condition as it may become an interesting feature to study later. Faustino's sections, as well as any winery projects, are also something to look at "read" it.

Your diagrams are very clear for the most part, I am curious if looking at these 5 examples will provided you with the knowledge you need to design a winery/club. Are there other types of buildings that would have similar spaces that you could look at? Are there other examples that you have found that do not have all the dwgs you needed to analyze?
You have selected three winerys and two hotel/club complexes. Those different functions need different settings. A winery need to be close to fields. A club/hotel of those dimentions need to be close to a citycenter.
I think you need to narrow down who your client is and your clients needs.
Like Cecilia pointed out, I also believe defining the user groups (The type locals and the visitors, etc) will be your next consideration.
Marco, I am curious your intentions of why you selected these building types. Why does this winery and hotel interest you? We would appreciate if you can comment on this question.
There is also a classic example of Herzog & de Meuron's Dominus Winery. How the lighting works on daytime and night time (both inside-out and outside-in) on your project can be an interesting study to look at.
At first I chose to have a club/bar restaurant but the site I chose is about 160,000 sq ft which is why I decided to include having a winery in the site but making it a winery/bar restaurant and have the club aside. here is a link to the site I chose http://arch3610f13site1.blogspot.com/

I wanted to go along with having a club/bar restaurant but the space of the site is huge. I need to re-do most of what I've done and narrow down my ideas.

I decided to go with a winery/restaurant and a club next to it. My club would be more of an elegant type of club that sells wine.
